Allen’s Sweet Potato Casserole -CV

Ingredients

3 lb. sweet potatoes
½ cup sugar
½ cup brown sugar, loosely packed
1 cup milk
2 beaten eggs
6 TBS butter, cubed
2 tsp vanilla
Marshmallows

Directions

1. Scrub and peel sweet potatoes.
2. Cut off and discard woody portions and ends.
3. Cut potatoes into cubes.
4. Cook covered in boiling water for 25-35 minutes or until tender. Drain.
5. Combine sweet potatoes, sugar, milk, eggs, butter and vanilla.
6. With a wooden spoon, stir to break up potatoes, but not completely mash them. Put mixture into a greased 9″ by 13″ baking dish.
8. Bake uncovered in a 350 degree oven about 10 minutes, place marshmallows on top and return to oven for another 15 minutes.
