Allen’s Sweet Potato Casserole

1 ½ lb. sweet potatoes
½ cup sugar
½ cup milk
1 beaten egg
3 TBS butter, cubed
1 tsp vanilla
½ cup brown sugar, packed
1/3 cup flour
2 TBS butter


1. Scrub and peel sweet potatoes.
2. Cut off and discard woody portions and ends.
3. Cut potatoes into cubes.
4. Cook covered in boiling water for 25-35 minutes or until tender. Drain.

5. Combine sweet potatoes, sugar, milk, egg, 3 TBS butter and vanilla.
6. With a wooden spoon, stir to break up potatoes, but not completely mash them. Put mixture into a greased 2-quart baking dish.

7. Combine brown sugar and flour; cut in the 2 TBS butter ‘til the mixture resembles coarse crumbs. Sprinkle crumb mixture on top of potatoes.

8. Bake uncovered in a 350 degree oven about 25 minutes or until set.

Note: When we had this at Harv’s, Allen had doubled the recipe and we loved it. When we made it in the above proportion it was too sweet. Yams were used both times.
