Caesar Salad

2 large heads romaine lettuce
1 cup freshly grated Parmesan cheese

For the dressing:
1 tablespoons good real mayonnaise (I like Best Foods)
2 teaspoons Dijon mustard
2 large garlic cloves, chopped
1/2 cup freshly squeezed lemon juice (~3 lemons)
2 teaspoons kosher salt
1/2 teaspoon fresly ground black pepper
1-1/2 cups good mild olive oil*
1/2 cup freshly grated Parmesan cheese

*Olio Santo is good, you should be able to find it at Williams-Sonoma

Wash the lettuce leaves and spin-dry in a salad spinner.  Stack the leaves on a cutting board and cut them crosswise into 1-1/2 inch slices.  Place them in a large mixing bowl. 

For the dressing, place the mayonnaise, mustard, garlic, lemon juice, salt and pepper in the bowl of a food processor with steel blade and process until smooth.  With the processor running, slowly pour (drizzle) the olive oil through the feed tube until thick.  Add the grated parmesan cheese and pulse 3 times.  

Toss the lettuce with enough dressing to moisten well.  Add the 1 cup grated Parmesan and toss.  Serve.

If you’re into fresh, not store-bought ingredients, try making this salad.  It’s easy and good!  It’s also great to add leftover steak or salmon.  Cut the recipe in half for fewer servings.
