Meatloaf with Cooked Oatmeal
1 cup cooked oatmeal
2 large eggs
2 lb meatloaf mix (1 1/2 lb ground beef, 1/2 lb ground pork)
1/4 cup soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1 bottle chili sauce (ketchup-based)
Preheat oven to 350F.
Cook oatmeal per box instructions (in second smallest pot).
Beat eggs in a large bowl.
Add all other ingredients, except chili sauce, and mix together. 
Transfer mixture to a 13- by 9-inch glass baking dish and mound into a 10 by 5 inch loaf. 
Spread chili sauce over meatloaf and bake 1 hour.

I’ve been making meatloaf with Mom’s recipe, also on this site, for years. Mom’s recipe actually came from the Quaker Oatmeal box and features uncooked oatmeal as an ingredient. When I saw this recipe that calls for cooked oatmeal, I was intrigued. The ingredients are similar so the flavor is familiar, but we liked the texture and consistency much more. My “meatloaf mix” didn’t include veal and I don’t think we missed it.
