ROAST CHICKEN WITH CURRIED HONEY MUSTARD SAUCE

2 chicken breasts
1 sm. onion, chopped
1/3 c. honey
1/3 c. spicy mustard
1 tbsp. curry powder
2 garlic cloves, minced

Preheat oven to 350 degrees. In small bowl, make sauce by mixing together honey, mustard, curry and garlic. Place chicken, skin side up, in single layer in large shallow baking pan. Pour sauce over chicken and bake, basting every 15 minutes, about 1 hour or until chicken is fork tender.

The flavor of the honey survives its competition with the curry very well. Recipe doubles easily.
