Adobo Roasted Potatoes are an excellent side dish for these pork chops.

Using a classic Puerto Rican adobo seasoning, this is a flavorful, but quick and easy side dish.

As of this posting, I have only made this once.  Carrie likes it a lot and wants it in rotation as-is.
