Popovers

Ingredients:

2 Eggs
1 cup all-purpose flour (152 grams)
1 cup milk
1/2 teaspoon salt

Directions:

Heat oven to 450 degrees.
Grease 6-cup popover pan or six 6-ounce custard cups generously.
Beat eggs slightly in medium bowl.
Beat in remaining ingredients just until smooth (do not overbeat).
Fill cups about one-half full.
Bake 20 minutes.
Decrease oven temperature to 350 degrees.
Bake 20 minutes longer or until deep golden brown. (too long, bake 13 minutes)
Immediately remove from cups and serve hot.

After baking, popovers can be frozen.  Pierce each popover with the point of a sharp knife to let the steam out, then cool on wire rack, wrap tightly and freeze. Heat the frozen popovers in a 350 degree oven for about 10 minutes or until piping hot.
