2 filet mignons

Preheat oven to 450 degrees. Rub steaks with olive oil, salt , and pepper. Add two tablespoons olive oil to an oven-proof* skillet or saute pan. When oil is hot, add steaks to the pan and sear until nicely browned, about two minutes on each side. Place the pan in the oven and roast for 4-5 minutes for medium rare, 10 minutes for medium well. Remember to use two oven mitts when removing pan from oven. *An oven-proof skillet can withstand about 500 degrees and will not have plastic or wooden handles.
