Jambalaya 2026

Ingredients:
1 Tablespoon Canola oil.
1/2 pound Kielbasa sausage- cut in 1/4″ thick semicircles.
1/2 pound Andouille sausage – cut in 1/4″ thick semicircles.
1/2 pound cooked sliced ham – cut in 1/2″ strip1 pound chicken breast – cut in 3/4″ chunks
1 Tablespoon Paprika
1/2 Tablespoon onion powder
1/2 teaspoon thyme
1/2 teaspoon cayenne
1 1/2 teaspoon Creole seasoning
1/2 teaspoon garlic powder
1 1/2 can Original Rotel (diced tomatoes with green peppers) – used half of the solids and most of the liquid from the half can
1 1/4 cup beef broth
2 teaspoons Crystal hot sauce
2 teaspoons Worcestershire
1 1/2 cups long grain white rice

Directions:
Preheat oven to 350 degrees
Heat oil in the small Dutch oven on medium – about 1 o’clock on the dial
Add sausages and ham and cook until the meat starts to brown, about 10 minutes, stir often
Add chicken and cook until the outside of the chicken turns white, about 3 minutes, stir almost constantly
Combine the spices in a small bowl, sprinkle them evenly over the meat, stir them in and cook for one minute
Stir in the tomatoes and broth
Stir in the rice
Cover pot and place in oven
Bake for 50 minutes
Remove from oven and serve
