{"id":494,"date":"2001-01-01T21:01:29","date_gmt":"2001-01-01T21:01:29","guid":{"rendered":"http:\/\/pauldearing.com\/?p=494"},"modified":"2010-12-13T04:58:54","modified_gmt":"2010-12-13T04:58:54","slug":"potato-salad","status":"publish","type":"post","link":"https:\/\/pauldearing.com\/?p=494","title":{"rendered":"Potato Salad"},"content":{"rendered":"<p>The Complete Potato Cookbook<\/p>\n<p>2 lbs, 6 or 7, red potatoes<br \/> 1\/3 cup red wine vinegar<br \/> 1\/3 cup sugar<br \/> &frac14; cup olive oil<br \/> &frac12; teaspoon granulated onion<br \/> 1 teaspoon basil, chopped fine<br \/> 1 cup mayonnaise<br \/> 1 tablespoon dried (or 2 fresh) parsley<br \/> Salt and pepper <\/p>\n<p>Boil potatoes 15-20 minutes in salted water until done but still firm.<br \/> Peel and cut potatoes into small cubes.<br \/> In medium bowl, combine vinegar and sugar, and then mix in oil, onion, parsley, basil and salt and pepper. (Note: if using fresh parsley, add it later, with mayonnaise.)<br \/> Add potatoes to bowl and stir to coat.
