{"id":432,"date":"2001-01-01T20:42:09","date_gmt":"2001-01-01T20:42:09","guid":{"rendered":"http:\/\/pauldearing.com\/?p=432"},"modified":"2010-12-13T05:44:03","modified_gmt":"2010-12-13T05:44:03","slug":"saffron-rice","status":"publish","type":"post","link":"https:\/\/pauldearing.com\/?p=432","title":{"rendered":"Saffron Rice"},"content":{"rendered":"<p>3 tablespoons unsalted butter<br \/>\n3 large shallots, thinly sliced<br \/>\nPinch (generous) of saffron threads<br \/>\n1 1\/2 cups Arborio or other short-grain rice<br \/>\n3 cups chicken stock or canned low-salt broth<br \/>\n3 tablespoons fresh lemon juice<br \/>\n2 tablespoons chopped lemon peel<br \/>\n1 large bunch chives, chopped (about 1\/2 cup)<br \/>\nSalt and freshly cracked white pepper <\/p>\n<p>Melt butter in heavy large saucepan over medium heat. Add shallots and saffron and cook 3 minutes, stirring occasionally. Add rice and stir to coat. Add stock and lemon juice; bring to boil. Reduce heat to low, stir and cover. Let simmer for about 20 minutes until creamy and tender, stir once at the 10 minute mark. Add lemon peel and chives. Season with salt and pepper.
