{"id":1896,"date":"2024-07-02T07:05:52","date_gmt":"2024-07-02T14:05:52","guid":{"rendered":"https:\/\/pauldearing.com\/?p=1896"},"modified":"2024-07-02T07:05:52","modified_gmt":"2024-07-02T14:05:52","slug":"filipino-barbecue-chicken","status":"publish","type":"post","link":"https:\/\/pauldearing.com\/?p=1896","title":{"rendered":"Filipino Barbecue Chicken"},"content":{"rendered":"\n<p><strong>INGREDIENTS<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>10\u00a0cloves garlic, pressed<\/li>\n\n\n\n<li>1\/4 cup lemon juice<\/li>\n\n\n\n<li>1\u00a0cup\u00a0ketchup, preferably banana ketchup<\/li>\n\n\n\n<li>1\u00a0cup\u00a0lemon-lime soda, Sprite or 7Up<\/li>\n\n\n\n<li>1\/2\u00a0cup\u00a0packed light or dark brown sugar<\/li>\n\n\n\n<li>1\/2\u00a0cup\u00a0soy sauce<\/li>\n\n\n\n<li>1\/4\u00a0cup\u00a0apple cider vinegar<\/li>\n\n\n\n<li>2\u00a0tablespoons\u00a0oyster sauce<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0ground ginger<\/li>\n\n\n\n<li>1\u00a0teaspoon\u00a0kosher salt<\/li>\n\n\n\n<li>1\/2\u00a0teaspoon\u00a0coarsely ground black pepper<\/li>\n\n\n\n<li>2\u00a0pounds\u00a0(about 4-5) boneless, skinless chicken breasts<\/li>\n<\/ul>\n\n\n\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place everything but the chicken in a medium bowl.\u00a0 Whisk to combine.<\/li>\n\n\n\n<li>Transfer 1\/2 cup of the marinade to a small, airtight container. Pour the remaininder into a large zip-top bag. Pat chicken dry with paper towels. Add the chicken to the bag, seal, and agitate to coat the chicken evenly with the marinade. Refrigerate the chicken and remaining marinade for at least 5 hours, or preferably overnight.<\/li>\n\n\n\n<li>Arrange a rack in the middle of the oven and heat the oven to 400\u00baF. Line a baking pan with aluminum foil, spray a wire rack with cooking oil and put it in the baking pan.<\/li>\n\n\n\n<li>Remove the chicken from the marinade, letting the excess drip off, and arrange on the wire rack. Roast for 15 minutes. Flip the chicken and roast until browned, cooked through, and the thickest part registers at least 165\u00b0F on an instant-read thermometer, 10 to 15 minutes more.<\/li>\n\n\n\n<li>Meanwhile, place the reserved marinade in a small saucepan and simmer over medium-low heat until thickened into the consistency of barbecue sauce, about 3 minutes. Remove the saucepan from the heat.<\/li>\n\n\n\n<li>Remove the chicken from the oven and turn on the broiler to high. Brush the reduced marinade onto the chicken.
