Pea Pilau

Ingredients:
1 ¼ cup Basmati rice, washed and soaked in cold water for ½ hour
2 ¼ cups water
1 tsp salt
1 tsp unsalted butter

2 tsp unsalted butter
1/2 tsp ground cumin
1 tsp onion powder
½ tsp ground cinnamon
½ tsp ground cardamom
1 tsp garam masala
1 cup frozen peas, thawed
½ tsp salt

Directions:
1. Drain the rice through a sieve and put into a 4 quart sauce pan with the water.
2. Bring to a boil, stir in the 1 tsp salt and 1 tsp butter.
3. Boil for 1 minute.
4. Cover and simmer over low heat for 15 minutes.
5. Remove from heat, leave covered for 10 minutes.
6. In a large frying pan, melt the 2 tsp butter over medium heat.
7. Add the spices (cumin, onion, cinnamon, cardamom, garam masala) and stir until combined with the butter, about 30 seconds.
8. Add the peas and salt, stir and cook for 1-2 minutes
9. Add the rice and stir gently with a metal spoon to combine.
10. Remove from heat and serve.
