Spanish Rice – CV

I tried this recipe to learn what browning the rice did to the texture. While not quite crunchy, the rice has a distinct crispiness that Carrie and I both like.

2 Cups rice
3 Cups chicken broth
3 TBS Tomato Paste (Italian)
1 tsp Italian seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
3 TBS Olive oil

Heat oil in frying pan on medium high heat.
Brown rice, stirring regularly.

In separate pan, bring chicken broth to slow boil.
Stir in tomato paste, Italian seasoning, onion powder, garlic powder, salt.
Stir in rice, cover, reduce heat to lowest and simmer for 20 minutes.
Remove from heat, let stand 5 minutes, fluff and serve.
