Shrimp in Coconut Chili Sauce

Simply Recipes

1 1/2 cups of rice, cooked

Marinade
6 cloves of garlic, crushed
1 1/2 cups of water
1/2 teaspoon salt

The Rest
1 pound of shrimp, deveined and peeled
Juice of 1 lime
1 jalepeno, seeds removed, scraped and finely chopped
1/2 teaspoon salt
2 Tablespoons olive oil
1 can (about 12 oz.) Coconut milk, halved
1 teaspoon chili powder (or sauce)

Cook the rice.

Pulse the marinade ingredients in a blender until garlic is finely broken up.
Marinate the shrimp in this mixture for about 10 minutes.

Strain the water from the shrimp and garlic.
Mix in lime juice, jalepeno, and salt.

Add 2 tablespoons olive oil to skillet over high heat.
Cook the shrimp for a minute or two, ’til done, stirring frequently.
Add half of the coconut milk and the chili powder and cook another minute, stirring frequently.

Stir the other half of the coconut milk into the rice.

Serve separately, or serve shrimp over rice, or you can mix them all together.

This is a fast and easy Shrimp dish.  Its coconut sweetness makes it a good accompaniment for spicier foods.
