Potato Salad

The Complete Potato Cookbook

2 lbs, 6 or 7, red potatoes
1/3 cup red wine vinegar
1/3 cup sugar
¼ cup olive oil
½ teaspoon granulated onion
1 teaspoon basil, chopped fine
1 cup mayonnaise
1 tablespoon dried (or 2 fresh) parsley
Salt and pepper

Boil potatoes 15-20 minutes in salted water until done but still firm.
Peel and cut potatoes into small cubes.
In medium bowl, combine vinegar and sugar, and then mix in oil, onion, parsley, basil and salt and pepper. (Note: if using fresh parsley, add it later, with mayonnaise.)
Add potatoes to bowl and stir to coat. Let potatoes stand in a cool place (not the refrigerator) for at least a half hour.
Pour off any liquid that has not been absorbed.
Stir in mayonnaise, just enough of the cup to coat the potatoes, sprinkle on the parsley and serve.
