Twice Baked Potatoes

3 large baking potatoes

1 cup diced bacon

½ cup chopped onion

¾ cup sour cream

½ cup milk

2 tablespoons butter, softened

¼ teaspoon salt

¼ teaspoon pepper

1 cup shredded cheddar cheese

Preheat oven to 400°.

Scrub potatoes and pierce with fork.  Bake 1 hour or until tender.

In large skillet, fry bacon and onion until bacon is crisp; drain.

 

Let potatoes cool slightly and cut each in half lengthwise.  Scoop out potato into a large bowl and mash with remaining ingredients, except cheese.  Save potato peels.

 

Stir in half of the bacon mixture.  Spoon an equal amount of potato mixture into each potato peel.  Reduce heat to 325° and bake for 45 minutes.  Spoon on cheese and remaining bacon mixture and bake until cheese is melted.
