Cedar-Plank Salmon

2-pound salmon fillet, skin on 1 cedar plank, soaked in water 30 minutes 1/2 cup brown sugar 2 tbsp canola oil 1 tbsp dried thyme leaves (we used fresh) 1 tsp cayenne pepper

Soak the plank in water for at least 30 minutes. Preheat a gas grill to high. (If cooking with charcoal, allow the coals to burn until they are covered with white ash.) Place the salmon skin-side down on the cedar plank. Combine the brown sugar, oil, thyme and cayenne in a bowl. Spread over the salmon. Turn grill down to medium and place the planked salmon on the grilling grate and cook, with grill covered. When the grill starts really smoking, turn the flame down to low setting. Don’t let the plank catch fire. Keep a spray bottle of water handy in case the plank ignite. Do not overcook the salmon. Estimated cooking time is 20 minutes or just until the surface fat begins to turn white.
